Seasonal Tasty Treat Tip by Golden Horizons Elder Care Services

With all these amazing seasonal treats comes a yearly dilemma: All those goodies are so tasty, but not necessarily so "healthy" for us. How do we reconcile having such savory tidbits with maintaining healthy lifestyles? It's all about balance and lifestyle choices. Below is a recipe to bring a taste of autumn (cranberries) with a touch of health. Found on Food Network and on our tips web page, here is the recipe below.Mixed Green Salad with Cranberry Vinaigrette Recipe Courtesy: Sandra Lee
Ingredients: - 1 1/4 cups whole cranberry sauce - 2 tablespoons orange juice - 2 tablespoons balsamic vinaigrette - 1 pinch sugar - 1 (5-ounce) bag spring salad mix (recommended: Fresh Express) - 2 tomatoes, diced - 1 cucumber, diced - 1/2 (5-ounce) bag herbed croutons
Preparation Directions: - Heat the cranberry and orange juice in a small saucepan, over medium heat until it boils. Remove from heat and let cool. - Strain cranberry mixture into a large bowl using a fine mesh strainer. Whisk in vinaigrette and sugar until well combined. - Add salad mix and half the dressing into a large bowl and toss with tongs until lettuce is coated. Add tomatoes and cucumber slices and gently toss. Add more dressing if necessary. Transfer to serving platter and top with croutons.
